Thanksgiving is quickly approaching here in Canada. I don’t know about you, but for my family things are going to be looking a little different. We’ve always spent the weekend rushing from family event to family event, trying to get in to see everyone. Now let me just say here, that I’m talking upwards of 4 or 5 family dinners. You see, it’s always been a tradition in my extended family to sit down all together – after all, this is one of 4 occasions throughout the year that we get a chance to connect with our cousins. I’ve always walked away from the weekend feeling like I needed a vacation, some down time, a chance to just be with my immediate family. Well, this year we are getting that chance. We have only one family dinner scheduled this year – our own. To be honest, I can’t wait!
The house is decorated and plans are in full swing as to what special Thanksgiving meal we will eat. Just because things are a little different than what we are used to this year doesn’t mean that it can’t still be special. I mean there are so many fun things to do around your home to decorate (just think about all those amazing colours outside – how can you bring those into your home?), ways that you can help others who may be in greater need like donating to a local food bank or bringing a homeless individual some food, and tons of delicious treats you can make and eat. So today, I wanted to share a fun recipe that I am making for my family – Turtle Apple Pops.

Turtle Apple Pops 2 large apples (or more)
3 ½ c. semi sweet chocolate chips
1 tbsp coconut oil
1 cup melted caramels
Wash and dry all apples. With the help of an adult, carefully slice the apples into thick slices going all the way from the top of the apple to the bottom. At the bottom of the slice, use a knife to make a small slit in the apple so that you can stick a popsicle stick in it.
Melt the chocolate and add in the coconut oil. Dip the apple slices into the melted chocolate and coat them well. Place them on a cookie sheet lined with a sheet of wax or parchment paper.
Melt the caramels (or use caramel sauce) and drizzle on top of the chocolate in fun zig-zag patterns. Sprinkle some chopped pecans on top of the, hopefully, still warm chocolate and caramel. You may need to gently press them in so that they stick. Refrigerate for at least 1 hour to allow the chocolate and caramel to harden. Serve and enjoy!
