Butterscotch Brownie Day May 9th!

Alright, I’m going to be honest with you today. Normally when i write about kids being in the kitchen, I include some sort of healthy recipe … well, today is a little different. I’m going to give you one of my favourite recipes, but I wouldn’t necessarily classify it as completely healthy. But, as I thought about it, I couldn’t let this day pass without being acknowledged and it is Mother’s Day on May 10th! This would be a great treat for you to make for your mom to help celebrate her on this special day. 

May 9th is Butterscotch Brownie Day! Fun Fact: butterscotch brownies were created before the chocolate brownies that we have all come to know and love. These delicious treats are also known as Blondies because of the colour that they are. Like chocolate brownies, these can be left as is or made fancier by adding things such as walnuts, pecans, chocolate chips and so much more.

Everyone has their favourite treat, and I know that not everyone likes chocolate (I am actually lactose-intolerant so good chocolate is hard to come by) or even brownies. Snacks are a great way to bring people together, to say “I’m thinking of you” to neighbours or loved ones, or a way of celebrating a special event. With Mother’s Day coming up they are also a great way to say “I love you” to your mom, aunt, grandmother and other maternal influence in your life. So I’m curious. What is your favourite treat? Butterscotch Brownies 

  • ¾ c. butter, softened
  • 3 c. brown sugar
  • 3 eggs
  • 1 ½ c. all-purpose flour
  • 1 ½ tsp. baking powder
  • 1 tsp. salt
  • 1 ½ tsp. vanilla extract  

Prepare a 9×13 baking dish with non-stick spray or line with parchment paper. Add the butter, sugar vanilla and eggs to a mixing bowl and mix until combined. In a separate small bowl, stir together the flour, baking powder and salt. Slowly add the powdered mixture to the wet mixture and mix until well combined. Bake at 350 degrees for 30 minutes. Allow to cool slightly before serving.
