Have you ever had trouble with getting your child to eat breakfast in the morning? I know that this is one meal I tend to skip just simply because I choose to sleep in for those extra ten minutes (although this may change once my daughter starts daycare).

Part of the reason, I find, that kids do not like to eat their breakfast (other than time) is that they don’t “want” anything. It has been my experience however, that kids take more ownership in what they eat when they have a hand in preparing it. That’s why I love the idea of breakfast bars – they’re even better when your kids are able to help make them. So here’s my favourite recipe:

2 c. oats

2 c. puffed rice cereal

½ c. almond or peanut butter

½ c. honey

½ c. dried blueberries

½ c. toasted chopped almonds

½ tsp. Salt

In a large bowl, combine all the ingredients with the exception of the salt. Mix well. Add the salt and mix again. Pour your granola mixture into a 9×9 baking pan that has been sprayed with a non-stick cooking spray and pat down with your hands. You could also place parchment paper on top and pat that down to prevent your hands from getting sticky. Chill until hard in the refrigerator, at least a few hours. Cut into bars and enjoy. Be sure to store them in the refrigerator or in the freezer.
